Classic Peruvian ceviche is composed of chunks of raw fish, marinated in freshly squeezed lime juice, with sliced onions, chili peppers, salt and pepper. Peruvian ceviche is prepared similarly to the method used in making Japanese sashimi, which entails the fish marinating in lime juice (and other spices) for a few minutes before being promptly served. Many Peruvian “cevicherias” (seafood restaurants which specialize in ceviche) serve a small glass of the marinade, which is called “leche de tigre” (tiger milk), along with the fish. Cevicherias are usually open just for lunch. There are many wonderful cevicherias in Miraflores along a street called La Mar Avenue, any of which would be a great option for ceviche.
